Ingredients

2 cups Arugula
2 cups Artichoke Hearts
1/4 cup Sliced Almonds
1 Pear (sliced)
1 cup Wild Rice
1/2 cup Extra Virgin Olive Oil
2 tbsps Lemon Juice
1 tsp Black Pepper
1 tbsp Agave
1 tbsp Dijon Mustard

Directions

Cook wild rice per package instructions. Set aside and allow to cool slightly.
While the rice is cooking make the dressing.
In a mixing bowl, whisk lemon juice, olive oil, black pepper, dijon mustard and agave until well blended.
Mix rice, arugula, artichoke hearts, pears and almonds together in a bowl.
Top with lemon dressing and serve.
