Healthy Superbowl Recipe: Cheesy Cauliflower Nachos

GAME DAY IS HERE! Greasy, over-salted, and carb-loaded is our standard snacking for watching the Superbowl, but we're here to elevate the plate with a healthy (but also indulgent) recipe — whip this up in under 30 minutes and serve for a nutrient-dense twist on Nachos! 

Colleen Faltot, nutrition specialist and owner of Grist Mill Fitness and Nutrition created this delicious Cheesy Cauliflower Nacho recipe in partnership for our 3-Day Real Food Reset Program. It's packed with flavor, dense in plant-protein and super simple to make. 

Ingredients

  • 1 head of cauliflower, chopped
  • 1 cup of refried beans
  • 1 cup of shredded mexican cheddar cheese
  • 1 jalapeño, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro
  • 1 avocado, diced
  • Option to add shredded chicken for additional protein!

Directions

Preheat oven to 400ºF with pan in oven (this helps to give the Veg an extra crispy roast)

When oven reaches 400ºF degrees, add chopped cauliflower to pan.

Once cauliflower is browned, about 20-25 minutes, add refried beans, shredded cheese and jalapeños and bake again to melt the cheese and warm the beans, about 5-7 minutes.

Take nachos out of oven, add on fresh ingredients and serve! DELISH!
